  • Ingredients:
    • 2 (5-6 oz.) skinless, boneless chicken breast halves
    • 4 cups baby spinach
    • 2 Tablespoons chopped walnuts
    • 1 cup fresh strawberries, halved
    • ¼ cup crumbled goat cheese
    • 4 Tablespoons favorite raspberry vinaigrette dressing
  • Preparation:
  • Grill or pan sear chicken over medium heat for 6-8 minutes on either side or until no longer pink. While chicken is cooking, toss baby spinach with walnuts, strawberries, and vinaigrette. Divide tossed spinach greens between 2 serving plates; slice chicken and arrange over salads.
